Blueberry Oat Pancakes

A great blueberry breakfast for the kids!

INGREDIENTS

Serves: 4

For the Oat flapjacks:

  • 1 cup flour
  • 1 cup rolled oats
  • ¼ cup sugar
  • 1 Tbs baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 1 ¼ cup buttermilk
  • 4 Tbs vegetable oil
  • 2 eggs
  • 1 ½ cups fresh blueberries

 

To serve:

  • Maple syrup
  • Blueberries

METHOD

  1. Place flour, oats, sugar, baking powder, bicarbonate of soda and salt into a bowl.
  2. Whisk together buttermilk, oil and eggs in a separate bowl.
  3. Add wet ingredients to dry ingredients then mix well to combine.
  4. Gently fold in the blueberries.
  5. Heat a lightly greased frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.
  6. Brown on both sides and serve hot drizzled with maple syrup, topped with more fresh blueberries.
