Blueberry & Lime Posset


This is the simplest dessert out there, yet so decadent and a real crowd-pleaser.

Easy to prepare ahead, serve with shortbread or wafer biscuits & topped with fresh berries.

Out of lime?
This recipe works just as well with lemons. Only use one lemon due to its size!


MAKES 6 x 150ml glasses

PREP TIME 5 minutes (excl. overnight setting)

COOK TIME 45-60 minutes

  • 500ml cream
  • 100g sugar
  • Zest and juice of 2 limes
  • 1 x 225ml tin OZblu® blueberry puree


  1. Place a sieve over a bowl and pour the puree through the sieve, stirring with a wooden spoon or spatula.
  2. Pour the cream into a large pan and tip in all the sugar. Bring it slowly up to a simmer, stirring slowly to allow the sugar to dissolve.
  3. As soon as the sugar is dissolved and the bubbles start to form around the sides of the pan, take it off the heat.
  4. Stir in the lime juice and zest along with the puree. Stir well.
  5. Pour into 6 small glasses, place on a tray and chill for 4 hours or overnight until set.
