Blueberry Vegan Pancakes


Vegan Friendly, Gluten Free, & Refined Sugar Free


MAKES 8-10 small pancakes

PREP TIME 10 minutes

COOK TIME 10 minutes

  • 2 small bananas, mashed
  • 2 tbsp almond or other nut butter
  • Squeeze of lime juice
  • 125 ml plant milk
  • ½ tsp cinnamon
  • 2 tsp baking powder
  • 125 g gluten-free flour
  • 1 x 440 ml tin OZblu® whole blueberry in syrup


  1. Place a sieve over a small pan and strain the berries from the syrup.
  2. Place the pan on the heat and reduce by half. Set aside.
  3. Mix the banana in a bowl with all the other ingredients except the flour. Lastly add the flour and check for consistency. You may need a dash or two of milk.
  4. Heat up a non-stick frying pan with a little coconut oil or cooking spray.
  5. Spoon batter into the hot pan. Pop a few berries into each pancake and cook each pancake for about 2-3 minutes until the edges start to brown and firm, then flip them. Cook for 1 minute on the other side.
  6. Serve with plant-based yoghurt, fresh berries and syrup.
