Blueberry Mascarpone French Toast

Something decadent for those lazy weekend mornings!

INGREDIENTS

Serves: 4

  • 1 country bread loaf
  • 100g fresh blueberries
  • 250g Mascarpone Cheese
  • Wild Blossom Honey to taste
  • 1 orange, zested
  • 4 free-range eggs
  • 125ml cream
  • Pinch salt
  • Pinch cinnamon
  • 1 Tbs oil
  • 2 Tbs pasture-fed butter

 

Fresh blueberries and toasted almonds to serve

METHOD

  1. Slice the bread into 8 medium-thick slices.
  2. In a bowl, lightly crush the blueberries then mix in the mascarpone cheese, honey and orange zest.
  3. Whisk together the eggs, cream, salt, cinnamon and more honey to taste.
  4. Dip the bread slices into the egg mixture and allow to soak for a few minutes.
  5. Melt the butter and oil in a pan, then gently fry the French toast in the pan until golden brown on each side.
  6. Serve warm, with a few scoops of mascarpone, drizzled with more honey if desired, sprinkled with extra blueberries and toasted almonds.
