Who says you can’t have ice-cream (or something similar) for breakfast?! Your kids will love you for this one 🙂

INGREDIENTS

Serves: 2

  • 200g frozen blueberries
  • 400ml plain yoghurt
  • 4 Tbs (or to taste) icing sugar (or honey*)
  • 1 tsp vanilla extract
  • Cones to serve (optional)
  • Fresh berries to serve (optional)

METHOD

  1. Place the frozen berries, yoghurt, icing sugar (or honey) and vanilla into the blender and blend until pureed.
  2. Once blended, spoon into cone cups (or bowls) and serve immediately topped with fresh berries. 

 

Note: This recipe is best served immediately, but should you choose to freeze it for future use, make sure that you re-blend the entire mixture prior to serving.
