A note from OZblu Blueberries and this recipe:

 

Monique Smit is the winner of a recent Summer Picnic hamper competition run on OZblu’s Facebook page. Her prize included a large picnic basket and Zola Nene’s latest cookbook.

To enter the competition, fans were asked to post their favourite blueberry recipe. We couldn’t get through half this recipe without drooling which is why we choose Monique as our winner. Try out the recipe below and let us know how it goes!

INGREDIENTS

  • 1 1/4 cups all-purpose flour
  • 3/4 cup oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2/3 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup OZblu blueberries
  • Golden syrup (optional)
  • Icing sugar – whipped (Optional)

METHOD

  1. Start off by preheating the oven to 180˚C
  2. Get out the baking tray and line with baking paper to ensure nothing sticks
  3. In one bowl, combine flour, oats, cinnamon, baking powder, baking soda and salt
  4. In another bowl, beat butter and sugars together until light and fluffy –
  5. usually takes about 2-3 minutes
  6. In the same bowl, beat in vanilla and egg until well combined
  7. Slowly add your flour mixture to sugar mixture at low speed, until combined
  8. Gently fold in the juicy blueberries
  9. Use a tablespoon to drop the mix onto your baking tray and press down lightly to flatten
  10. Now into the oven they go for about 7-8 minutes
  11. Once ready, remove from the oven and let cool

Enjoy for breakfast with a drizzle of golden syrup or as a sweet treat with some whipped-up icing sugar. Voila!

  • Swop out the traditional baking soda for aluminum-free baking powder
  • Use raw honey instead of sugar
  • Use organic apple sauce instead of golden syrup
  • Furthermore, decorate your plate with more fresh OZblu blueberries
  • You can never have too many blueberries
